Easy PHO Soup with Essential Oils

I LOVE Pho and I was always afraid to make it because I hear how hard it is!  Well good news, I found a delicious and simple recipe.  I just have to share it with you!!!!! Best part is it only takes about 30 minutes total to make! Crazy right? Ingredients:

Soup Broth:

  • 1 teaspoon avocado oil

  • 1 small onion peeled and halved

  • 1 quart low sodium broth (you can do vegetable, chicken or beef: I did vegetable)

  • 2 cups water

  • 2 star anise

  • 1 cinnamon stick

  • 2 tablespoons fish sauce

  • 1 teaspoon sugar

  • 1 drop doTERRA Ginger essential oil

  • 1-2 drops doTERRA Clove essential oil

Noodles and Toppings

  • 4 oz dry flat rice noodles

  • 1/4 small onion thinly sliced into strips

  • 1/3 lb protein (optional, I did vegetarian: Sirloin steak, chicken, shrimp)

  • 2 stalks green onions

  • 1/4 cup cilantro

  • 1 cup bean sprouts

  • 6-8 mint leaves

  • 6-8 basil leaves

  • 1/8 cup cilantro

  • 1 lime sliced into wedges

  • 1 jalapeno pepper sliced thin (optional)

Directions:

  1. In a medium size pot over high heat add avocado oil, onion calves, cinnamon stick and let cook for about 3 minutes while stirring occasionally.

  2. Add all other ingredients for the broth and bring to a boil. Stir, then lower heat to a simmer and cook uncovered for 20 minutes.

  3. Meanwhile cover the rice noodles with hot water and soak for about 8 minutes, drain and set aside.

  4. Discard onion, star anise and cinnamon stick.

  5. Divide noodles evenly between two bowls and pour broth over them. Finish by adding toppings of your choice

  6. Serve Immediatlely
