Easy PHO Soup with Essential Oils
I LOVE Pho and I was always afraid to make it because I hear how hard it is! Well good news, I found a delicious and simple recipe. I just have to share it with you!!!!! Best part is it only takes about 30 minutes total to make! Crazy right? Ingredients:
1 teaspoon avocado oil
1 small onion peeled and halved
1 quart low sodium broth (you can do vegetable, chicken or beef: I did vegetable)
2 cups water
2 star anise
1 cinnamon stick
2 tablespoons fish sauce
1 teaspoon sugar
1 drop doTERRA Ginger essential oil
1-2 drops doTERRA Clove essential oil
Noodles and Toppings
4 oz dry flat rice noodles
1/4 small onion thinly sliced into strips
1/3 lb protein (optional, I did vegetarian: Sirloin steak, chicken, shrimp)
2 stalks green onions
1/4 cup cilantro
1 cup bean sprouts
6-8 mint leaves
6-8 basil leaves
1/8 cup cilantro
1 lime sliced into wedges
1 jalapeno pepper sliced thin (optional)
In a medium size pot over high heat add avocado oil, onion calves, cinnamon stick and let cook for about 3 minutes while stirring occasionally.
Add all other ingredients for the broth and bring to a boil. Stir, then lower heat to a simmer and cook uncovered for 20 minutes.
Meanwhile cover the rice noodles with hot water and soak for about 8 minutes, drain and set aside.
Discard onion, star anise and cinnamon stick.
Divide noodles evenly between two bowls and pour broth over them. Finish by adding toppings of your choice
